For a savory breakfast, brunch or even dinner idea, try this simple sweet potato hash! Perfect served on its own or over some healthy grains (shown with avocado toast topped with hemp seed). This dish will fill you up with healthy carbs giving you fuel for the day. It won’t take long to prepare either!
Oven roasted sweet potato hash
Serves 2
1 large sweet potato, peeled and chopped small
1/4 cup yellow onion, diced
1/4 cup colorful peppers, diced
4-5 mushrooms, diced
2 cups baby spinach, chopped
Drizzle of avocado or olive oil
A couple shakes of garlic powder
A couple shakes of paprika
A shake of pink salt and pepper
Preheat oven to 425.
On a baking sheet covered in parchment, scatter chopped sweet potato, drizzle on some oil and seasonings, toss to coat. Roast in oven for 15 minutes.
Meanwhile chop remaining veggies. At timer, toss in onion, mushrooms and peppers and cook for another 5 minutes.
At timer. Toss in chopped spinach and bake or broil another 2 minutes.
Plate (or bowl) with sprouted grain toast (shown topped with hemp seed). Excellent served over grains as well!
